I wouldn't ride the small block at Cave Run. They now come as an oem part on certain Giant mountain bikes and that's when I saw them. I've never used them, but I would be afraid to where I ride. If the rocks didn't destroy them I believe they would get me killed. The other locals agreed with me, but if you ride rolling hardpack they look like a fantastic tire.

A bike I rented in Moab last week had a small block on the back and it worked well in the loose rock and sand.

I don't like smallblocks personally. My favorite is a Nevegal 2.10 tubeless. Cushy, grippy, not too heavy. I'm alot more confident on those.

My opinion on airing up too much is that it can actually hurt you, depending on the aggressiveness of your tread. Some aggressive treads are actually faster at lower volumes, even on flat terrain. If the spacing makes a knobby hit individually and your tire doesn't flex/give due to high pressure, then it is going to be slower than if you had aired down and gotten a smoother ride. Maybe that's obvious, I dunno.
